What are the risks for rollups if the latest data is kept off-chain via a committee? - Committee can hide / not make data public. Optimistic rollups cant defend against invalid state transitions. Mass exit. - Data is lost by mistake. Zkrollups are stuck and can never progress.

So basically @PolygonHermez is building a zkEVM for general purpose use. They are based on Groth16 which are the smallest proofs in the zkRollup space and seems like its the best way to go as stuff like Starks can never be put into EVM as its too expensive.
